Cheat's herby breadcrumbs

It's really quick to make these breadcrumbs, so I tend to make them up as I need them. I'll share with you how I make flavoursome herby breadcrumbs with added seeds.

Making breadcrumbs is easier than you may think. I just tend to use a slice of my homemade bread, toast it and whiz it up in the mixer for a few seconds to make all those lovely crumbs.

I like to use them for my pasta bakes and veggie meatless balls dishes (I tend to exclude the pumpkin seeds when the veggie balls).


If you want to change it up you could try sesame seeds or sunflowers seeds. Why not got seed-tastic and use a mixture of sesame, sunflower and pumpkin.


Ingredients

1 piece of bread (toasted)

1 pinch of thyme (dried)

1 pinch basil (dried)

A little grated black pepper

1 tablespoon nutritious yeast (optional)

1 tablespoon pumpkin seeds (optional)


Method

  1. Break the toast into pieces and add to a blender. Blend until fine crumbs.

  2. Add the rest of the dried ingredients and mix through with a spoon.
